What is einkorn? This ancient grain is packed with more nutrients than modern wheat and has a simple gluten structure making it easier to digest than hybridized flour. Diana's new cookbook, Baking with Einkorn - Modern Recipes for an Ancient Grain is based on her own journey to better health.
